Chicken Fajita Quesadillas

There's so much we love about quesadillas. They're quick to prepare, but packed with a symphony of satisfying flavors and textures, from melty cheese to the delicate snap of pan-fried tortillas. In this simple recipe, the mild tang of our Gluten Free Sourdough Style Tortillas combines with juicy, fajita-seasoned chicken to create a snack that is sure to gather everyone around the table. ¡Buen Provecho!

Ingredients
☑️1 lb. Chicken Breasts or Thighs, boneless, skinless, & sliced
☑️1 packet Siete Chicken Fajita Seasoning
☑️2 Tbsp Avocado Oil or Light Olive Oil
☑️1 pack Siete Sourdough Style Tortilla
☑️2 cups Queso Oaxaca, Monterey Jack, or Non-Dairy Cheese, shredded

Step 1
Heat a medium cast iron skillet over medium high heat. In a bowl, season the sliced chicken with the Chicken Fajita seasoning and oil. Stir the meat to fully coat and place in the preheated pan to cook. Once cooked through, set the meat aside.
Step 2
Preheat a separate cast iron skillet over medium heat.

Step 3
Build quesadillas by layering one Sourdough Style tortilla, a sprinkle of cheese, chicken, more cheese, and a second tortilla.
Step 4
Cook each quesadilla on the skillet until lightly browned and warmed through. Cut into wedges and serve with your favorite Siete salsa!

Pork Carnitas Tacos

These carnitas call for a bit of patience, but the reward is gently-spiced, slow-cooked pork that melts in your mouth. Paired with the subtle sweetness of our Maíz Organic Yellow Corn Tortillas, a spritz of zingy lime, and a dollop of salsa, every bite is completely worth the wait. ¡Buen Provecho!

Ingredients
☑️1 Pork Shoulder (about 2.5 lbs)
☑️1 packet Siete Pork Carnitas Seasoning
☑️1-2 packs Siete Maíz Organic Yellow Corn Tortillas
☑️Diced White Onion, as needed
☑️Chopped Cilantro, as needed
☑️ Lime Wedges, as needed
☑️Siete Jalapeño Botana Sauce, as needed

Step 1
In a slow cooker, add pork and ½ cup of water. Cook on low setting for 6-7 hours.
Step 2
Once the meat is cooked, reserve ½ cup of cooking liquid, and drain the rest.
Step 3
Add carnitas seasoning packet to the meat with ½ cup of cooking liquid. Mix well.

Step 4
For crispy carnitas, spread the seasoned filling over a sheet tray, and broil in the oven for 2-3 minutes or until crispy. You can alternatively crisp up the meat in a cast iron pan.
Step 5
Preheat a separate cast iron skillet over medium heat.
Step 6
Heat each corn tortilla for 10-15 seconds per side. Fill each tortilla with the cooked pork and sprinkle with diced onion and chopped cilantro. Serve with lime wedges and Jalapeño Botana Sauce to taste!

☑️1 packet Siete Al Pastor Seasoning

☑️ ½ Pineapple, peeled & diced
☑️ ½ White Onion, diced
☑️ ½ Cilantro, chopped
☑️ 1½ - 2 Limes, juiced
☑️ Sea Salt, to taste
